I have always loved lasagna, I think it is the layers of tomato sauce, noodles, vegetables and cheese that is filling and satisfying. So as I started changing my diet to include more vegetables, I tried to figure out how to make a lasagna-like dish that was packed with delicious flavors and fiber. After playing around with several variations I ended up making this vegetarian gluten free treat. My solution take out the noodles and replace them with eggplant. I also coated the eggplant with almond meal, finely chopped almonds instead of using wheat flour. I chose eggplant instead of noodles because it has a mild flavor that goes so well with all the ingredients I love in lasagna. Also one of my classmates in naturopathic medical school is Italian and she taught me the secret of sauteing eggplant to crispy goodness.
What I love about my eggplant casserole is that I can make it as individual servings or I can literally assemble it like a lasagna to have some to share or freeze for another time. I love putting different ideas together to create a new healthy dish that everyone can enjoy! I hope you get some inspiration from this or decide to try it. I think you will like it.
