Creating Foods from What's in the Fridge

One of my friends has the opportunity to work and travel outside of the country for 2 weeks and she invited me to house sit and keep Frida the cat company.  It worked out perfectly since have 4 projects due this month. I thought the change of scenery might help me focus and get my work done.  As she was showing me around the house she said the magic words “whatever is left in the fridge feel free to eat.”  Since I am such a foodie and I love to prepare fresh healthy meals, it is always a blessing to have food options to create with. I said great and we continued with the rest of the house tour. Once I arrived a realized there were several tasty bites in the house.  I decided to start a food project and blog about it.  I want to try to create at least seven days of meals using the perishables left here in the kitchen.I think it is a great way for you to see how you can think outside of your normal meals and create new taste combinations with everyday foods.

So yesterday I was delighted to see that there were quite a few tasty morsels left in the fridge to eat.  I took a quick tour and noted that there were plenty of vegetables: red, yellow and orange bell peppers, baby broccoli, asparagus, tomatoes, kale, baby spinach and mushrooms.  Also there were nectarines on the counter.

There were also staples like garlic, onions, salsa, eggs, Kalamata olives and extra virgin olive oil.  She had a well-stocked herb and spice pantry too providing me with options on flavoring my food well.  She also has a small herb garden with rosemary, basil and a few twigs of mint growing.

I noticed there is raw milk, cheese, blue cheese, organic milk, Parmesan cheese, sour cream and Greek yogurt. I am not much of a dairy person; however, since it is here I will use it as well.

I brought Brussel sprouts, beets, goat cheese, potatoes, onion, jicama, limes, lemon, black beans, avocado, corn torilla chips, almonds, oatmeal, ginger, garlic scallions, chives and green tomatoes from my garden as well as cilantro and a vegetarian quiche that I prepared.

As you can see I have quite a bit of odd combinations to choose from.  I am actually excited to see how many different meals will come out of my food options.  Let’s see what I come up with…..
