Food Challenge: Pumpkins created 3 ways

Since I was staying at my friend's house in October, I knew I had to make pumpkin.  I love getting a small baking pumpkin and making a great creation. The great thing about pumpkin is that you can use the meat to make soups, breads or muffins, desserts or side dishes.  You can also use the seeds as a tasty protein snack.  I start by baking a pumpkin until it is soft.  I cut it open and pull out the seeds.  While I let the pumpkin cool,  I make pumpkin seed snacks.  I learned how to make pumpkin seeds with my mom when I was a child.  It was part of the fun of carving pumpkins.  It can be the same with your family. When I was a child we would wash the pumpkin seeds and pat them dry.  Once they are dry you can add a teaspoon or two of extra virgin olive oil and a little sea salt.  Then bake for 10-15 minutes until they are brown, take them are out and they are done.  If you want to spice them up a little more you can try this recipe: I season them with sea salt, chili powder and extra virgin olive oil.  Next I toss them all together and put them in the oven for 10-15 minutes then they are done.  Both are tasty and make great snacks.

Now we have the meat of the pumpkin to use.  I find that a small pumpkin usually yields about 4 cups of pumpkin meat.  I decided that I could make two dishes: pumpkin bread and a curry pumpkin soup.  Pumpkin bread can be a great treat for breakfast, lunch and dinner.  Curry pumpkin soup is a hearty soup that is tasty and fast.

The pumpkin bread recipe I have posted on my website is also found in my book, Daelicious! Recipes for Vibrant Living.  It is made with whole wheat and pumpkin so it is packed with fiber, which is always a healthy choice.

The curry pumpkin soup is simple to make by adding olive oil in a saucepan with diced onion, garlic, salt, curry powder, ginger and nutmeg.  After four minutes add the pumpkin, coconut milk and vegetable broth and cook for another fifteen minutes.  After cooking, puree and you are ready to eat.

Pumpkins are a versatile food that can be used in so many ways.  Experiment and enjoy the results of eating a food that is packed with fiber and beta-carotene. It helps with insulin sensitivity and is a great antioxidant too.
