Lime Cilantro Brown Rice

Brown rice is a whole grain because it has fiber along with the starch portion of the grain. The fiber portion of grains contain the trace nutrients our cells and our bodies need. A large
Harvard study concluded that women who eat all whole grains like brown rice weighed less than those who did not.


Makes 6 servings.
1 1/2 cup of water
1 cup of long grain brown rice
(rinsed)
1/4 cup of lime juice
1/2 cup of cilantro, chopped
1 teaspoon of sea salt
1/2 cup of scallions


1. Add rice to boiling water; cook for 35-40 minutes or until water has completely evaporated.
2. Pour into a bowl and fluff with a fork; allow to cool.
3. Add lime juice, cilantro, salt and scallions.
4. Serve.

Cook time: 45 minutes
