Avocado Smoothies Are A Big Success
Smoothies are one of my all time favorite snacks. They are versatile, they can be sweet or savory. They can be made with fruits, veggies, protein, or a combination. I enjoy them all times of day: breakfast, afternoon, snack time, or as a sweet dessert after dinner. When I am asked to do cooking demonstrations, smoothies are one of my most requested demos because they are easy, they do not require a heating source, and people love them! This was the case last week when a corporate event asked me to prepare healthy smoothies for their employees. I decided on three different types that represented different tastes and textures. One of my favorite recipes is an avocado smoothie that I created six years ago when I did demos for the Whole Foods Market in Silver Spring. I wanted to create a smoothie that asked people to walk on the wild side of eating healthy. I honestly didn't expect it to be a hit. However people liked it so much that I decided to put the recipe in my first book.
What makes this Avocado Midday Delight so popular with everyone that tries it? Probably the peaches, mango, and banana. The avocado plays the role of creating a smooth and creamy texture. Now if you are like most of the employees at the event you probably have one eyebrow raised at the name or the color alone. A few brave souls stepped up to the table and tried it. When their lips tipped up into a smile and their head nodded yes, others followed suit and tried it. Within about 30 minutes people were wandering into our area asking for the smoothie, they had been instructed to taste this interesting smoothie. It was really fun to see the smoothie get such good response.
1/4 cup fresh mashed avocado
1/2 cup rice milk or other milk substitute
1 teaspoon agave
1/2 frozen banana
1/2 cup frozen mango pieces
1/4 cup frozen peaches
1/4 cup apple juice
1. In a blender whip together avocado and milk.
2. Add agave, banana, mango and peach pieces. Whip another 10 seconds or until smooth.
3. Add apple juice and mix 5 seconds.
4. Freeze leftover smoothie. (To reuse, defrost for about 10 minutes, then place in blender
for 40 seconds.)
Prep time: 5 minutes
The combination of fruits is a powerful healing tasty treat. This combination of sweet and fiber based fruit give this a light and fruity flavor packed with antioxidants, Vitamins A, C, E, K, and potassium just to name a few. Avocados are considered a super fruit because they have antioxidant, anti-inflammatory, and wound healing properties. They also have benefits for blood sugar regulations, heart health, and cancer prevention.
