Spice It Up Gazpacho Soup

Dr. Dae's Spice it Up Gazpacho Soup. This quick Whole food soup is packed full of antioxidants and fiber.


3 ripe tomatoes, chopped
1/4 cup red onion, finely chopped
1/2 cup cucumber, peeled, seeded, chopped
1/2 cup red pepper seeded and chopped
1/2 cup celery, finely chopped
1 Tbsp chopped fresh parsley
2 Tbsp chopped fresh chives
2 cloves garlic, minced
1/4 cup red wine vinegar
1/4 cup extra virgin olive oil
2 cups tomato juice
Juice of 1/2 lemon freshly squeezed
pinch of Sea Salt
pinch Freshly ground pepper
1 heaping pinch red pepper chili flakes
cayenne pepper

Blend to desired consistency about 1 minute and 30 seconds.  Serve immediately or chill and let flavors blend.
