Makes 6 servings.
1 1/2 cup of water
1 cup of long grain brown rice
1/4 cup of lime juice
1/2 cup of cilantro, chopped
1 teaspoon of sea salt
1/2 cup of scallions
1. Add rice to boiling water; cook for 35-40 minutes or until water has completely evaporated.
2. Pour into a bowl and fluff with a fork; allow to cool.
3. Add lime juice, cilantro, salt and scallions.
