Today happiness is spending 2 hours in the kitchen for a weeks worth of meals! I decided to bake an organic chicken so I had time to prepare a few other dishes while I was waiting for the chicken to finish. It is such a wonderful feeling to have several prepared dishes in the fridge ready for a busy week. This is a practice that I have done for years. I plan what I am going to prepare ahead of time and get the ingredient ready and then I focus on getting several dishes prepared at on time. I even bring my Ipod upstairs to jam to some music or listen to a lecture while I’m cooking. If I am lucky I can get a friend to come over to keep me company while I am cooking. It makes the time fly and I have food for the week. Here are 5 dishes I prepared.
